This is an Indonesian savoury snack, you can eat this with peanut sauce, chili or just like that. The taste remind me of cornish pasties, the different is, the skin is thinner in our pastel. Filling can be vary from rice noodle, vegetable, chicken, boil eggs and so on. This recipe use carrot, potato and pasta with cheese ( I like to use mozarella or parmesan). This snack easily can be vegan :)

Ingredients

20 pieces
  • For skin dough*
  • 250 grall purpose flour
  • 1/2himalayan salt - add if desire
  • 40 grbutter or margarine - look for vegan one if you prefer
  • 40 mloil (vegetable or sunflower)
  • 70 mlwater
  • For filling**
  • 2tbps butter (or oil)
  • 1onion, dice small
  • 3medium carrots
  • 2new potatoes
  • 1/4 cuppasta - boil and cut
  • 3spring onion - slices
  • 2-3garlic
  • 3thai chilies - optional
  • 2tbps grated cheese of your choice (can be vegan or omit)
  • 1 tbspcondense milk (can be subtitute with sugar)
  • 1 tsphimalayan salt
  • 1,5 tspwhite pepper
  • 2,5 tbspall purpose flour
  • 60 mlwater
  • 1 tspchicken knorr (optional)

Steps

  1. 1

    For filling* Heat the wok, in medium heat, add butter/oil. Add onion, garlic till fragrant. add the flour, mix well till it change color. add carrot, potato and pasta, spring onion. mix well.

    Add white pepper, salt, chicken stock mix well. Mix water with condense (or sugar) and pour it in. Last, add the cheese. mix well and taste it. Add to your taste. turn it off. It should be quite thick n sticky. leave this till cool.

    For dough * - in a pan melt the butter, add oil, salt and mixed well. turn off the pan.

    Gradually add the water little by little, mix with hand just till all mix. Do not over mix, as it will make the dough hard.

    Weigh the dough about 25-30 gr each (you can make it bigger if you prefer). and roll them with pin to make thin layer. Used a glass or something to make a round thin dough (see picture).

    Add about 1 tablespoon of filling in the middle, fold in half, and do as in picture.

    When all finish, Heat pan with oil. The oil need to be able to cover the pasties. when it is hot, lower to medium. and start frying. make sure to move them during frying.

    Note: Even if you want to eat them later, this need to be fry right away (just fry half way, and put in fridge. when you want to eat, you can always put them in the oven to warm it up).

Whether it's a spoonful of sugar or a handful of cabe (chillies), it can only make your food (or live) more exciting. The little Indonesian girl in me reminisces about the spicy flavors of home. Dishes such as Nasi goreng and rendang, transport me 7000 miles back to my home in Jakarta.Arriving in UK, I felt lost. Finding foods that I missed could be quite a challenge. That’s when my culinary journey started. It's far from perfect, and just a guide, use and make them your own. I hope it would help you, as it help me.
