Cooking Instructions

Preheat oven to 175'C. Grease pan 9×5 inch loaf pan with cooking oil or melted butter and set aside

In a mixing bowl, mix together mashed bananas, plain yogurt whisk them until combine together. Then mix in eggs, lemon zest and vanilla until smooth.

Then add the dry ingredients. Sifted flour, sugar, baking powder, baking soda and salt. Mix until combine well

Then add melted butter inside. mixing for about 2 minutes until dry ingredients are fully incorporated.

Scrape down the sides and pour batter into the pan and spread evenly.

Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.

When the cake is done let it cool on the rack for 5 to 10 mins.

Cut the cake and ready to enjoy (^_^)

I've tried making lots of different banana cakes, but if I mixed in lots of bananas, the cake would always be too heavy. I tried thinking up a recipe where I could still use lots of bananas but result in a light yet satisfying cake,. I was aiming for something between a genoise and a pound cake. You can definitely taste the banana, but this cake is still soft and moist and has the best balance of any cake I've made until now.I recommend using fully ripened bananas. If the bananas aren't fully ripe then increase the amount of sugar. Even with ripe bananas, this is not very sweet. I also recommend using unsalted butter. I made this simple with pancake mix and melted butter so that anyone baking for the first time couldn't even fail. It's easy to make if using this recipe.
