Add red Kidney beans, evoo, salt, onion and garlic to skillet. Cook for 5 minutes. Add coconut milk, 2 cups water and ring to a boil. Wash rice and add to skillet. Bring to a boil then turn down to low. Cover skillet tightly. Cook for ten minutes then add bell pepper, chopped snapped peas, cilantro and parsley. Fluff with a fork. Cover tightly and cook for another 10 minutes. Turnnoff stove and leave covered.
