Braised chicken forestiere

Season the chicken with salt, pepper, heat olive oil in lidded Saute pan or shallow casserole. Pan fry the chicken over a medium high heat

Remove from the pan and keep to one side. You will need about 2tbsp of fat left in the pan to cook onion, so if the chicken has released alot of fat drain the excess

Add the onion and fry for 2-3 min before adding bacon and garlic to the pan. Continue to stir untill the have a little colour

Sprinkle over the flour and stir until the flour has lightly browned

Stir iN the tomato puree and then gradually add the red wine and brown stock stirring untill the liquid has fully mixed into the flour and puree paste

Return the chicken to the pan and bring to the simmer. place a lid on the pa n and continue to cook allowing the sauce to just simmer for some minutes until the meet is completely tender

To finish remove the chicken, place into a plate or lid and keep in a warm place eg side if a oven or any source of heat. Skin the sauce of any further excess fat and adjust the consistency of the sauce if necessary

Adjust the seasoning before adding the tomato... Place the chicken into the sauce and scatter some chopped parsley before serving
