To make the dough: Take wheat flour and salt in a bowl. Add water to make a soft dough. Keep it covered with a cloth for 10-15 minutes.

To make the stuffings: take potatoes, carrot, cauliflower and capscicum in a microwave safe bowl. Cover and microwave for 4 minutes. Keep it aside.

Now heat oil in a pan. Add cumins and black mustard seeds. Let it crackle. Then add chopped onion and saute for 2 minutes, then add microwaved vegetables and ginger paste in the pan. Stir fry for 2 more minutes. Mash the cooked vegetables properly from the back of the spoon. Switch off the flame.

Further, add dry mango powder, pav bhaji masala, chopped chilli and coriander leaves. Mix well and let it cool completely.

To make parathas: divide the dough into 4 equal portions like a ball shape. Press in the middle and fill the stuffing prepared and pack it properly. Now, apply some wheat flour on the roller and roll it into paratha.

Heat a tawa and put the paratha on it and roast till golden in colour applying oil or ghee to both the sides.

Serve parathas with curd and pickle.
