Sooji Upma
Steps

Turn on the flame and heat a pan. Add 2 cup semolina/sooji.

Fry the semolina continuously on medium flame till it turn to brown colour. Take it out in a plate.

Now heat a kadai. Pour 2-3 tsp oil

Once oil is heated up, put mustard seeds and peanuts(Optional) and fry on medium flame for at least 1-1.5 minutes

Then add chopped green chilli and chopped onion. Saute on medium flame

Now add chopped vegetables and saute for a while. Cover and cook for few minutes. Saute in between.

And take out the cover and add 1/2tsp turmeric powder, 1/2tsp red chilli powder and mix it well.

Now pour 1/2 glass of water and then cook it on medium flame.

After 3-4 minutes, check vegetables are cooked properly. If not continue the process by covering it and cook for 1 more minute. Then you will notice vegetables cooked properly.

Now add more 1/2 glass of water. Add salt. Let it boil on high flame.

Reduce flame to low after sometime when everything is cooked.

Now add roasted semolina and mix everything well. Cover and cook the sooji on medium flame for few minutes. Saute in between. Cover it again to cook.

After 3 minutes upma is ready to serve. Turn off the gas and get it out in a serving bowl. You can serve it with namkeen also.
