METHI PAPAD SABZI
This is a very quick and easy recipe which is majorly consumed by jain community. It is prepared by fenugreek seeds and papad. So it can be prepared without any green vegetables and with normal basic spices. So when your vegetables are out of stock you can choose this option and it is prepared in few minutes.
You can use any papad but Mung daal papad is preferable. You can also add jaggery to it, if you like.

Wash and soak fenugreek seedsin hot water for a couple of hours. Then pressure cook it. Once it is cooked,drain out excess water and rinse it with water, so the bitterness of fenugreek seeds cuts down.

Now heat oil, add asafetida and red chilli powder and add cooked fenugreek seeds.

Add 2 cups of water approximately. Add salt and coriander powder. Let it boil.

Once it starts boiling, cut the papad into pieces, add them and mix, after 1-2 minutes slow down the flame, half cover the vessel with lid.

Let it cook for 3-5 minutes, so the papad will cook properly. Then turn off the heat.

Serve hot. Add papad at the time of serving not in advance.
