First, heat oil in a deep pan. Cut the potatoes, green bell pepper, and eggplant into pieces. Fry the green bell pepper and set aside. Then fry the potatoes and eggplant one at a time and set aside.

Soak the tamarind and strain to get tamarind water. Set the tamarind water aside.

In a pan, add mustard seeds, curry leaves, and nigella seeds to temper. Add the ginger-garlic paste, then add all the remaining ingredients and spices listed above. Add the fried vegetables and mix everything well.

Add salt and tamarind water, stir, cover, and cook for 5 minutes. Mirchi Baingan Salan is ready.
