Ginger bread Almond Butter Bites

So easy, although perhaps a bit messy as melted chocolate always is! Worth the mess though and are a reasonably healthy bite with nutritional value and minimal sugar I used Nutcessity gingerbread almond butter but you could use regular almond or peanut butter - you may need to adjust the amount of ground almonds depending on consistency.

Put your almond butter in a bowl and gradually stir in enough ground almonds to form a reasonably thick dough. I added 2 tbsp to mine but the nut butter I used was quite thick to start with.

Press the nut mix into a silicone chocolate mould if you have one, or scoop and shape into balls using a spoon if not and place on a plate lined with parchment paper.

Freeze for at least 1 hour or longer.

Melt the chocolate in the microwave then carefully turn out the nut butter shapes and dip them in the chocolate. You’ll need to work quickly before they warm up and become difficult to handle.

Store in the fridge to nibble on whenever you fancy a sweet treat
