Steps

Place the rice in a bowl,add enough water to completely submerge the rice and leave to soak between 6-8 hours or leave over night
Drain off the water and rinse the rice
Note:There is a special type of rice for this recipe its called (Shinkafar tuwo)Tuwo rice and the closet substitute for the rice is jasmine rice - 2
Once you are done with rinsing the next step is to blend the soak rice together with the precooked rice and add some water to blend
Proof the yeast by adding some warm water into a bowl and let aside - 3
Add salt,sugar to the rice batter
Add the proofed yeast to the rice batter
Add potash if the batter is sour
Add baking powder - 4
Stir in together until all the ingredients are well combined
The resulting batter should not be too thick, otherwise the the masa will be tough
Now cover it up and allow it to proof for 1-2 hours - 5
Place your masa pan (tanda) on fire add little oil to the holes and allow the oil to be a little bit hot use a scoop or anything that is available and pour the rice batter inside the holes and cook for like 4mins once the masa begins to solidify you will see some little bubbles on top of the masa then its time to flip

Allow the order side of masa to cook for about 3-4 mins more then take off the masa

Repeat this process until you have exhaust the rice batter and serve

Your masa is ready to serve
