Galia Melon Gazpacho with Ham 🍈🍅

Today we made a different kind of gazpacho. It's just as fresh and nutritious, but enhanced with a fruit that's essential in our summer diet: melon. The Galia variety is one of my favorites for its sweet and pleasant flavor. It's small, round, and usually weighs less than 2.2 pounds (1 kilogram). It's a cross between two varieties (Cantaloupe and Honeydew) developed in the 1970s in Israel. Its name is the feminine form of 'Gal,' which means wave in Hebrew. This type of gazpacho is perfect for fans of the classic melon with ham. Don't miss out on trying it.

Ingredients

Serves 4 servings
  • 4large Roma tomatoes
  • 1garlic clove
  • 2 slicesGalia melon
  • 1/2Italian green pepper
  • 5 1/3 ozday-old bread (about 150 grams)
  • 1/2cucumber
  • 3 tablespoonsmild olive oil
  • Coarse salt
  • Apple cider vinegar or sherry vinegar, to taste

    Start with good-quality tomatoes; I prefer large Roma tomatoes. For the bread, I recommend using a crusty roll, as it gives a better texture.

    Chop the tomatoes, pepper, garlic, and cucumber along with two generous slices of melon. I used Galia melon for its sweeter flavor, but any variety of this delicious summer fruit will work.

    Add the day-old crusty bread (previously moistened), coarse salt, olive oil, and your preferred vinegar. For a stronger flavor, use sherry vinegar; for a milder taste, apple cider vinegar is ideal. It's up to your preference. If you want a thinner gazpacho, add a small glass of cold water before blending all the ingredients with a blender.

    Chill to your liking; I recommend serving it as cold as possible. Before serving, top with a few pieces of ham and diced melon. Enjoy this unique gazpacho, enriched with the season's favorite fruit.
