Ingredients

4 person
  • 8-10 pieceschicken with skin on
  • Drumsticks & thighs
  • 2lemons juice
  • Rub in 2/3 tbs salt with your hands,
  • and marinade them for 2 hours
  • 3 cupsall purpose flour
  • 3eggs
  • Oil for deep frying on medium heat
  • 11secret HERBS & SPICES:
  • seasoning flour
  • 3 cupsflour
  • 1 tbssalt
  • 1/2 tbsthyme
  • 1/4tsb basil
  • 1/4 tbsoregano
  • 1/2 tbsdried mustard
  • 1 tbscelery salt
  • 1 tbsblack pepper
  • 2 tbssmoked paprika
  • 1 tbsgarlic powder
  • 1/2 tbsground ginger (or onion powder)
  • 2 tbswhite pepper
  • Vege Rice Bran oil for deep fry
  • 1 bowlColeslaw salad: thinly cabbage, grate carrot,chop celery
  • 1 Tbslight Mayonnaise for Coleslaw's dressing
  • French Potato Chips and KFC's Mashed Potato & gravy
  • Potato,Butter, Cream/milk. Cornflour,Onion as option,Blackpepper

Steps

    To take out the smell of the chicken pieces: wash the chicken pieces first. Then put them in a big bowl, add salt & pour over 2 lemons juice, coat roughly & rubbing with your hand all over the chicken pieces, cover & keep in the fridge for 2 hours. Set aside.

    There are 3 separate bowls: The First bowl is for the plain flour.
    The Second bowl is for wet batter coating: put 3 eggs, 1 small can of club soda (bicarbonate soda), 1 cup flour, 1/2 tbs salt: beat all with a whisk vigorously. Set aside.

    The third bowl is the seasoning flour: add 3 cups of all purpose flour and the 11 herbs & spices and toss with both hands using a big spoon with one hand and another hand use a small spoon. Take one of the big drum & place in the first bowl with the plain flour.Then dip the drum in the wet egg batter bowl then put the drum in the seasoning flour bowl & packed them in very well, until fully coated, then shake off any eccess of flour.Prepare the wok with the vege oil and heat on high temp.

    Deep fry the chicken one by one in hot oil at 350 F for 5' or until golden brown.Don't overfill them in the pot, just 4 pieces because the oil will drop it's heat!!. 🤔

    It should take approximately 15-16 minutes for the chicken to cook. For the bigger pieces like the drum it takes 18'-20' to cook. Lift them out, drain and serve 😍Next thing to do is to screen the leftover bit of pieces, take it out of the oil, with a small colander, the prepare to fry for the second batch. If you don't then the burnt bit of pieces will stick to the fried chicken

    If you don't want the deep fry than use Air Fryer which has a rapid air circulation giving a crunchy food with no added oil. In the small space put 4-6 chicken pieces of the coated chicken, then turn the preset settings, to 360 degrees for 18' and press start. On halfway with a thong flip over the chicken. When is cooked: The chicken is crispy & juicy.🍟😄To serve with Coleslaw & Potatoes Chips🍸🍻 and a glass of cold drinks. The chicken is meant to be eaten with your fingers.😍Happy cooking!

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking. In a pan, add your frying oil and preheat the oil on medium heat (it takes approximately 20 minutes for the oil to heat. But you can define if it is hot or not, by adding wooden spoon in the oil, if the bubbles come out, it means, it is hot enough) then, once the oil is hot, deep fry your chickens on medium heat. The drumsticks take approximately 15 minutes and the thighs take approximately 18-20 minutes to be done.
