Khandvi

One of my favourite dishes. Khandvi is a steamed snack made with gram flour and buttermilk or yoghurt and served with green chilies, grated coconut, coriander leaves, ginger and mustard seeds. The gram flour batter is cooked to make a thick paste and spread thinly on a flat surface.

Steps

Take gram flour, buttermilk, turmeric powder and salt in a large bowl. Mix properly and make smooth batter using a hand blender. Grease a large plate or back side of a thali or an aluminum foil with cooking oil and keep aside.

Set a wok on medium heat. Add 2 tbsp oil and strain the batter into that pan and cover with the lid for 2 minutes.

Now remove the lid and start stirring the batter.

Keep stirring constantly to avoid lump formation

Cook until batter become thick and does not taste raw. It will take approx 8 to 10 minutes.

Now spread the batter with spatula on flat surface like thali.

Once it's cool down. Place straight cuts using a knife.

Carefully roll each strips into a roll like swiss roll. And transfer them in a serving plate.

Heat a 2 tbsp of oil in a small tempering pan. Add mustard seeds, green chillies and last add sesame seeds and spread this seasoning over the khandvi rolls.

Lastly sprinkle some shredded coconut and coriander leaves. Ready 🙂
