How to Make Egyptian Fino Bread (Samoli Rolls)
I made a few adjustments to the recipe, but kept some of the original step photos. The changes were necessary to improve the final result I got after tweaking it. Credit for the recipe modification goes to Chef Um Rusal, with a few small differences in the ingredients—I added milk, which I hadn't used before, and I really appreciate her help. Thank you so much! ♥️😍

Steps
- 1
Mix the dry ingredients together well.
- 2
Add the milk and mix well with the flour, then add the oil and mix again until you get a slightly cohesive dough.
- 3
Gradually add warm water until the dough comes together well. The amount of water may vary depending on the type of flour.
- 4
Rub a little oil on your hands and over the dough, then knead the dough well on your work surface until it becomes softer. When you press it lightly with your finger, it should spring back. Shape it into a large ball and let it rest for just 5 minutes.
- 5
Lightly dust your work surface with flour and roll the dough into a log shape.
- 6
Cut the dough into small pieces using a knife or dough cutter.
- 7
Shape each piece into a ball.
- 8
Roll each ball into a small rectangle.
- 9
Take the dough from the right side and roll it up into a log or cylinder shape. Do not press down on the dough while rolling.
- 10
Pinch the ends and bottom of the dough to seal, and place the seam side down on a floured baking sheet, with the smooth side facing up.
- 11
After arranging them on the floured baking sheet, cover them well with a clean cloth to protect from air, and let them rise until doubled in size, about 2 hours.
- 12
This is how they look after doubling in size and rising well.
- 13
Bake in a preheated oven at 355°F (180°C) for 20–25 minutes, watching carefully. If you want the tops to be darker, turn on the top heat for 5 minutes at the end, watching closely, then remove immediately.

Enjoy! 😋 Sorry if the instructions are long, but I wanted to make them as clear as possible. 😅
