Almond Cake!

It was my daughter's birthday, and this year, since we didn't go to Greece in 2020, I decided to make the cake myself from scratch! 🤩
I've made many cakes with my mother in the past for my own birthdays, but this is my first cake as a mom! 😅
Tips:
i) I made the sponge cake and the cream (which I put in the fridge) the night before, then the next day I made the syrup, and after it cooled, I assembled the cake and made the whipped cream. I left it in the fridge for a day, and we cut it the following day.
ii) I didn't have a piping bag—it's not like I make cakes every day 😂—so I made one out of parchment paper (found instructions online), but if you try this, make 2-3 because mine tore! 😝

For the sponge cake: In a stand mixer bowl, beat the eggs with the sugar until light and fluffy. Lower the speed and gradually add the extracts, baking powder, and flours until well combined. Line a 9 x 9 inch (23 x 23 cm) baking pan with parchment paper and bake at 350°F (180°C) for 30-40 minutes.

For the cream filling: In a saucepan, add all the ingredients and stir until it comes to a boil. Remove from heat and cover with plastic wrap as it cools.

For the syrup: In a small saucepan, combine the sugar and water and bring to a boil for 3 minutes. Once cooled and ready to use, add the almond extract.

To assemble: Cut the sponge cake into 3 equal layers with a large knife. Place one layer on a platter and brush with syrup, then spread cream filling (you could add some sliced almonds here if you like). Add the next layer of sponge, more cream, and finish with the last layer of sponge!

For the whipped cream: Whip the heavy cream very well, then add the powdered sugar, extract, and food coloring if desired. Use a spatula to cover the entire cake, then decorate however you like! All you need is time and creativity! 😁
