In a skillet with olive oil, sauté the garlic and onion until translucent, then set aside.

Season the salmon with smoked salt and black pepper, then set aside.

In a blender, combine the blueberries, sour cream, cream cheese, milk, sautéed onion and garlic, blue cheese, lemon juice, and salt and pepper to taste. Blend until smooth.

Place the salmon fillets in a baking dish, pour the sauce over them, and bake at 480°F (250°C) for 20 minutes.

In a saucepan, heat half of the chicken broth. Once hot, add the rice and saffron strands. Let the liquid absorb, then add the remaining broth. Before the broth is fully absorbed, add the mushrooms and peeled shrimp. Remove from heat when the rice is cooked.

To serve, use a flat plate. Place the salmon in the center, and arrange the rice, shrimp, mushrooms, sliced avocado, and halved cherry tomatoes around it. Sprinkle wheat germ over the avocado and cherry tomatoes.
