My German freinds take on a Classic
Steps

Put the whole potato in Boiling water with skin on for 20-25 mins.

Drain and allow to air dry until can handle to peel
- 3
Push the Peeled potato through a press or Ricer (you can use a masher but make sure NO lumps).

Add 2/3 of the flour, the egg, nutmeg (or herbs) and salt. Mix well together - add more flour is needed so a dough forms.

Take 60 Gr portions and foam into a ball with floured hands.

Bring a large pot of water to the Boil and add teaspoon salt. Gently place the balls in the water and lower the heat to gentle boil for 20 mins. Remove from the water and serve immediately.
