Cook the pasta in a pot of salted boiling water according to the package instructions.

For the pesto: Blend the ricotta with the washed red bell pepper and 1 tablespoon of olive oil until smooth.

When the pasta is cooked, drain and rinse under cold water.

Add the pesto to the pasta, toss to combine, and serve.
