Ingredients

  1. 2 Tbsp.Olive Oil
  2. 1/2Yellow onion, diced
  3. 1jalapeño, diced
  4. 8 oz.Hot Italian Sausage
  5. 3Garlic cloves, minced
  6. 2 tsp.Red pepper flakes
  7. 1 tsp.Dried oregano
  8. 1 tsp.Dried basil
  9. 1 canDiced tomatoes
  10. 2Peppers in adobe sauce
  11. 1 Tbsp.Adobe sauce
  12. 2 C.Chicken broth
  13. 1/4 C.Heavy cream
  14. 1/4 C.Parmesan cheese
  15. 3scallions, chopped

Cooking Instructions

    In large saucepan over med-high heat, heat olive oil.

    Add onion and jalapeño and seasonings, cook until onions are soft and translucent. About 3 min.

    Add in the hot Italian sausage and crumble. Cook 5-7 min. until browned.

    Add in garlic cook 1 min. until fragrant and then add can of diced tomatoes, peppers in adobe sauce plus 2 Tbsp. of the adobe sauce itself, and chicken broth.

    Bring to a boil and then reduce heat to simmer and let simmer 10 min.

    Add in heavy cream. Top with Parmesan and scallions.
