Recipe for Sate Maranggi: Tender and Delicious Beef Skewers

Yesterday, during Eid al-Adha, I received quite a bit of beef, so I decided to make Sate Maranggi. Here's a tip: if you want the beef to be tender, wrap it in papaya leaves and let it sit for 45-60 minutes. If you're using tenderloin, you don't need to wrap it in papaya leaves because it's already tender.

Cut the beef and wash it thoroughly. Crush the papaya leaves, place them in a bowl, put the beef on top, wrap the beef with the papaya leaves, and let it sit for 45-60 minutes.

Blend the shallots, garlic, ginger, and galangal until smooth, then sauté the spices until fragrant.

Unwrap the beef from the papaya leaves, pour the sautéed spices over it, add tamarind water, palm sugar, coriander, salt, and sweet soy sauce, then mix well and let it sit in the fridge for 1-2 hours to absorb the flavors.

After marinating for 1-2 hours, skewer the beef onto satay sticks.

Grill the beef, either on a non-stick pan or over charcoal.

Occasionally brush the satay with sweet soy sauce, then cook until the beef is done.

Prepare the ingredients for the soy sauce sambal.

Mix all the sambal ingredients together, then add sweet soy sauce and lime juice, and stir until well combined.

Place the soy sauce sambal on top of the satay, then add fried shallots and cucumber. Enjoy, my online friends! :)
