Ingredients

  1. Yakhni/ Stock
  2. 500 gmMutton
  3. 4-5Green Cardamom
  4. 2Black Cardamom
  5. Cumin seeds 1 tspn
  6. Black Pepper Corn 1 tspn
  7. 1 tspCoriander seeds
  8. 2small Bay Leaf
  9. Clovesa few
  10. 1 inchpiece of ginger
  11. 5– 6 cloves Garlic
  12. 2dried red chili
  13. 1medium onion (sliced)
  14. 2– 3 tbsp oil
  15. to tasteSalt
  16. Rice
  17. Rice 3 cups (soaked for 30 minutes)
  18. Yakhni/ broth 3 cups/glass
  19. 2 1/2 cupsWater
  20. 1 tspCumin seeds
  21. 1 tsp ginger garlic paste
  22. 4-6Green chilli
  23. Yoghurt 1tblspn
  24. Garam masala half tsp
  25. 4-5Black Pepper
  26. 5-6Potatoes

    For yakhni first

  2. 2

    Bhonofy the meat with oil until it changes color.
    Add water (according to your cooker or pot) along with all spices. And cook until meat is ¾ cooked. Not soft or tender.

    Strain the stock with a large strainer in another large bowl.

    Hand press all strained spices to release their juices in the yakhni/ broth. Discard them.

  5. 5

    Yakhni is ready. It should be 2-3 glasses

  6. 6

    For rice

  7. 7

    Saute onions until golden. Add ginger garlic paste and cumin seeds and sauté.add potatoes as well

  8. 8

    Add the mutton, yoghurt, green chilli and masalas and saute fr 1 minute.

  9. 9

    Add the broth and water. Adjust salt.
    Add the drained rice and cook until water is dried out.

  10. 10

    Close the lid and let rice steam(put on dum) for 15 minutes on low flame.
    Once done- fluff the rice with a flat spoon and serve!
