Magic Cake or Smart Cake

Magic Cake or Smart Cake
Its name comes from the fact that with just one preparation, a kind of magic happens in the oven. Yes, just as I tell you, when baked, the batter separates into three perfectly distinct layers. At the bottom, there's a dense and delicious pudding, in the middle, a smooth and creamy flan appears, and on top, there's a delicate and fluffy sponge cake.
Originally from Romania, its original name is Prajitura Desteapta, which means smart cake. However, in this part of the world, it is known as Magic Cake or Smart Cake.

Cooking Instructions
- 1
Preheat the oven to 350°F (180°C) and prepare an 8 or 9-inch square pan by lining it with parchment paper.
- 2
Now prepare the mixture. All ingredients should be at room temperature. Separate the egg whites from the yolks and beat the whites with a pinch of salt until stiff peaks form, then set aside.
- 3
Combine the yolks, sugar, and vanilla and beat until the mixture whitens and doubles in volume.
- 4
Add the melted butter (either microwaved or at room temperature) and beat. Once well integrated, continue beating while adding the sifted flour in three batches, alternating with a splash of milk, until everything is well combined and there are no lumps.
- 5
Now gradually add the egg whites to the mixture we made earlier, folding them in gently with a spatula to avoid deflating them. Be careful not to overmix, as the batter should remain quite liquid but also slightly lumpy for the cake to separate into three layers.
- 6
Pour the mixture into the prepared pan and bake in the preheated oven at 350°F (180°C) for 10 minutes. Then lower the oven temperature to 320°F (160°C) and bake for another 50 minutes, or until a toothpick inserted comes out clean. Once done, remove from the oven and let it cool completely in the pan.
- 7
Once cooled, remove from the pan, cut into portions, and decorate each piece by dusting powdered sugar over the surface and optionally garnishing with strawberries, raspberries, blueberries, or just powdered sugar.

Magic Cheese Cake Magic Cheese Cake
This is not a new recipe by my mother's version of a very old and popular cake. The magic is when it bakes, the layers switch. The cake cooks to the top and the cheesecake sinks to the bottom. Don't know why this happens but it just makes it fun. I highly recommend fresh berries for the side. Taylor Topp Comacho -
Easy-as-pie Apple Cake Easy-as-pie Apple Cake
As Melissa Clark, from The New York Times, points out, the name of this cake is somewhat deceiving, since most apple cakes are easier than pie (which is actually never that easy if you're making it from scratch). In any case, it's a simple, excellent cake with a tender crumb, subtle spicing and soft pockets of fruit. Serve it plain, or with a dollop of ice cream, whipped cream or crème fraîche. Ricardo -
Chocolate & Vanilla “Spanish plum-cake”!! Chocolate & Vanilla “Spanish plum-cake”!!
Today I bring you a “plum cake” — but a Spanish one… Ours is different from the English or Italian versions. I made this one with vanilla and chocolate .In Spain, the term “plum cake” refers to a rich, moist sponge cake, often enjoyed as a sweet treat alongside coffee or tea. Interestingly, despite its name, this cake typically doesn’t contain plums. The name is borrowed from English.Spanish plum cakes are commonly prepared with ingredients such as flour, sugar, eggs, and butter, resulting in a tender and flavorful loaf.Overall, the Spanish interpretation of plum cake showcases how culinary traditions evolve and adapt across cultures, resulting in unique and cherished confections.#april2026 Chus Molinero -

Lemon Custard Cake Lemon Custard Cake
This recipe has been around for a long time. I have read it originated in Rome. It has many names, custard cake, three layer cake, flan cake and magic cake to name a few. Its a simple batter that cooks in a low oven to form 3 layers. There are many flavors but the batter is basically the same. It is important to use the pan size called for, it does not double well. Make 2 if you want more servings. It is an amazing custard topped moist and refreshing with the lemon flavor in this one. Serve with berries and whipped cream for a delicious dessert. Give the cake cooling and chilling time, its best chilled overnight fenway -
