Magic Cake or Smart Cake
Its name comes from the fact that with just one preparation, a kind of magic happens in the oven. Yes, just as I tell you, when baked, the batter separates into three perfectly distinct layers. At the bottom, there's a dense and delicious pudding, in the middle, a smooth and creamy flan appears, and on top, there's a delicate and fluffy sponge cake.

Originally from Romania, its original name is Prajitura Desteapta, which means smart cake. However, in this part of the world, it is known as Magic Cake or Smart Cake.

Ingredients

  1. 4eggs
  2. 2 cupsmilk (about 500 ml)
  3. 3/4 cupsugar (about 150 grams)
  4. 1/2 cupbutter (about 125 grams)
  5. 1 cupall-purpose flour (about 120 grams)
  6. 1 tbspvanilla extract
  7. 1 pinchsalt
  8. For decoration
  9. powdered sugar

Cooking Instructions

  1. 1

Preheat the oven to 350°F (180°C) and prepare an 8 or 9-inch square pan by lining it with parchment paper.

  2. 2

Now prepare the mixture. All ingredients should be at room temperature. Separate the egg whites from the yolks and beat the whites with a pinch of salt until stiff peaks form, then set aside.

  3. 3

Combine the yolks, sugar, and vanilla and beat until the mixture whitens and doubles in volume.

  4. 4

Add the melted butter (either microwaved or at room temperature) and beat. Once well integrated, continue beating while adding the sifted flour in three batches, alternating with a splash of milk, until everything is well combined and there are no lumps.

  5. 5

Now gradually add the egg whites to the mixture we made earlier, folding them in gently with a spatula to avoid deflating them. Be careful not to overmix, as the batter should remain quite liquid but also slightly lumpy for the cake to separate into three layers.

  6. 6

Pour the mixture into the prepared pan and bake in the preheated oven at 350°F (180°C) for 10 minutes. Then lower the oven temperature to 320°F (160°C) and bake for another 50 minutes, or until a toothpick inserted comes out clean. Once done, remove from the oven and let it cool completely in the pan.

  7. 7

Once cooled, remove from the pan, cut into portions, and decorate each piece by dusting powdered sugar over the surface and optionally garnishing with strawberries, raspberries, blueberries, or just powdered sugar.
