Ingredients

  • 10-12small karela or if they are big ones cut them
  • 1 teaspoonturmeric powder
  • 1 teaspoonred chili powder
  • 1/2 teaspoongaram masala powder
  • 1 teaspoonamchur powder (dry mango powder)
  • 1 teaspoonfennel powder (saunf powder)
  • 2-3medium sized onions
  • 4-5 tablespoonmustard oil
  • as requiredsalt

Steps

  1. 1

    Rinse and peel the karelas

    Make a vertical cut on each karela keeping the base intact.

  2. 2

    Remove the hard seeds with a small spoon.

  3. 3

    Put a pinch of salt in all and keep for 30 minutes. After 30 min rinse them nicely under running water.

  4. 4

    Now mix all the dry spice powders with very little salt.
    stuff the spice powder mix in the karela.

  5. 5

    Tie a thread tightly around each karela.
    Same way put masala in the slit onions

  6. 6

    Now for frying

    heat the oil and fry the karela in the oil till they are browned and cooked.

  7. 7

    In the same oil, onions and fry them till they begin to brown.
    add the karela and saute till they and the onions become crisp and golden.

  8. 8

    Add the rest of the spice mix, if there is any left over..
    while serving bharwa karela remove the thread and serve bharwa karela with some poories, parantha
