I halfed the recipe, divided the batter into 2 and baked twice in a 6" pan.

I halfed the recipe, divided the batter into 2 and baked twice in a 6" pan.
Steps

Mix oil, sugars & eggs one at a time in a bowl and whisk until combined.

Mix other dry ingredients in a bowl.

Fold dry ingredients into wet ingredients in 3 portions.

Add carrots and raisins.

Divide batter into two, grease two 9" pans and bake until a toothpick inserted in the middle comes out clean.

Cool & decorate with icing of choice (I used ermine buttercream), garnish with carrots.

You can serve plain too. Enjoy.
