Carrot Burfi is a delectable North Indian sweet dish. Made with grated carrots,ghee & dry fruits. This recipe is loved by people of all age groups.The recipe is similar to gajar Halwa. The only difference is you just need to cook the carrots for some more time that what we cook for gajar halwa so that sugar cooks more and the Burfi sets after cooling.

Ingredients

  1. 3 tspghee
  2. 4 cupsgrated carrot
  3. 1.5 cupmilk
  4. 1/2 cupsugar
  5. 1/4 tspcardamom powder
  6. Few cashews
  7. Few raisins
  8. Few pistachios

Cooking Instructions

    Grate the carrots.

    In a pan add ghee and then add the grated carrot. Carrot will shrink slightly. Then add 1/2 cup milk. Milk will reduce after sometime. Then add 1/2 cup sugar. Mix the sugar well till it dissolves.Add Khoya or mawa. Mix well to avoid any lumps.Add the cardamom powder. Garnish with nuts and raisins.

    In a greased tray add the gajar halwa. Form a block. Cool completely and rest for 30 mins. After 30 mins invert the tray. Gently tap on the tray to loosen the halwa. Cut squares.
