Babru is a type of fried flatbread or puri which is from Himachal Pradesh. This Puri is made out of wheat flour with the filling of black gram. Traditionally this filling does not have any spices but I have added salt, hing and red chilli powder to it. Babru is served with chana madra. Because it has a filling of black gram, it is like a one type of kachori.

Ingredients

  • 1 cupblack gram /whole black udad
  • 1 teaspoonsalt
  • 1 teaspoonred chilli powder
  • 1/2 teaspoonhing/ asafoetida
  • 3 cupswheat flour
  • 1 teaspoonsalt
  • 1 tablespoonoil
  • As required Oil to fry

    Wash and soak black gram for 8 to 10 hours. Now drain water out of it and grind it to a corse paste. Do not add any water while grinding because it will be difficult to roll if the the mixture is wet.

    Take wheat flour in a bowl and add salt and oil to it. Now add water little by little and make a semi soft dough out of it. This dough should not be very tight or should not be very soft. If the dough is tight then the filling will come out of it. Cover and rest it for 15 minutes.

    In blackgram mixture, add salt hig and red chilli powder. Mix it and make 20 balls out of it. Divide the wheat flour into 20 equal portions.

    Now take one portion of dough and flatten it a bit with the help of hand and in the middle put one ball of black gram mixture. Now cover it with the dough making sure that there are no cracks. Now roll it into thick puri.

    Prepare all the puris in the same way.

    Heat oil in a pan and add rolled puris to it and fry it on medium heat until light pink in colour.

    Prepare all babru in the same manner.

    Serve babru with chana madra or any type of pickle or chutneys.
