It is kovai traditional dish and I learned from my mother. It is very tasty and easy preparation. Very few ingredients are needed for this dish.

It is kovai traditional dish and I learned from my mother. It is very tasty and easy preparation. Very few ingredients are needed for this dish.
Steps

Cut the brinjal into 4 part without fully opened. The head part of brinjal is not fully cutted.

Heat a pan add 1 tablespoon of oil. Add 3 tablespoons of coriander seed, 1 tablespoon cumin seed, 1 tablespoon of pepper, 4 red chillies, 10 small onion. Roast it in low flame.

Cut the coconut into small pieces.

Add the coconut with that roasted spice and grind it. Make a smooth paste.

Heat the pot. Add 2 tablespoons of oil and heat it. Add brinjal and fry it till golden brown. Add tamarind water cook for 5 min.

Add the fine paste into the pot. Add Salt, turmeric powder half spoon and salt as required.

Cook for 5 mins. Garnish the kulambu with coriander.
