For dosa batter : take a bowl, add urad dal and rice, pour water and soak for 4-6 hours,. rinse soaked urad dal and rice for 2-3 times,. transfer them to batter mixture jar, add water 2 centimeters above the level of dal and rice,. add salt and run the mix until the batter becomes soft

Fermenting dosa batter: pour the batter into a vessel, cover and leave it overnight for fermentation. Batter is ready now

1. Take a non-stick tawa and heat it. Sprinkle some water on the tawa and gently wipe it using a cloth.

Now add few drops of oil to a tawa or pan

3. When the pan is hot enough, pour a ladleful of the batter and spread it in a circular motion. Make a dosa that is not too paper thin or else the filling may flow out.

4. Cook on a high flame untill the batter turns brown in colour and crisp. Keep in mind to adjust the flame as per the pan size and thickness.

5. Take a tbsp of the nutella or any spread and gently apply it over the dosa. Dab a little butter or oil on the dosa.

6. Serve with sambhar and 4 chutneys (coconut, Tomato onion, traditional South Indian chutney, keralian)
