In a bowl, combine the chicken with the spices, buttermilk, and onion. Mix well, cover, and refrigerate overnight or for at least 6 hours.

In a wide dish, combine all the breading ingredients and stir with a spoon to mix the spices evenly into the flour.

Take each piece of chicken and coat it thoroughly in the breading mixture. Shake off any excess flour and place on a plate.

Pour the oil into a skillet and heat over medium-high heat. Fry the chicken until golden brown and crispy, about 3–5 minutes per side. If using whole chicken pieces, you may need to cook them longer.

Done! Enjoy! Serve with buttermilk biscuits, French fries, and coleslaw.
