Ingredients

6 hours & 10 minutes
Serves 4 servings
  1. 1.1 lbschicken (about 500 grams; use chicken tenders, which are the tender part of the breast, or cut a whole chicken into 8 pieces)
  2. 1 teaspoonblack pepper
  3. 1 teaspoonsalt
  4. 1 teaspoonsweet paprika
  5. 1/4 teaspoondried thyme
  6. 1/4 teaspoondried oregano
  7. 1/4 teaspoondried rosemary
  8. 1/4 teaspooncayenne pepper
  9. 2 cupsbuttermilk (about 480 ml) or sour milk
  10. 1/2onion, sliced into rings
  11. For the breading:
  12. 2 cupsall-purpose flour (about 250 grams)
  13. 1 teaspoonsalt
  14. 1/2 teaspoonsweet paprika
  15. 1/2 teaspooncayenne pepper
  16. 1/2 teaspoongarlic powder
  17. 1/2 teaspoononion powder
  18. 1/2 teaspoonwhite pepper
  19. For frying:
  20. Plenty of corn oil

Steps

6 hours & 10 minutes
  1. 1

    In a bowl, combine the chicken with the spices, buttermilk, and onion. Mix well, cover, and refrigerate overnight or for at least 6 hours.

    In a wide dish, combine all the breading ingredients and stir with a spoon to mix the spices evenly into the flour.

  3. 3

    Take each piece of chicken and coat it thoroughly in the breading mixture. Shake off any excess flour and place on a plate.

  4. 4

    Pour the oil into a skillet and heat over medium-high heat. Fry the chicken until golden brown and crispy, about 3–5 minutes per side. If using whole chicken pieces, you may need to cook them longer.

    Done! Enjoy! Serve with buttermilk biscuits, French fries, and coleslaw.
