Party jollof rice

Heat oil in a pot add chopped onions and garlic and fry for some minutes

Add tomatoes paste and fry in the hot oil, turning constantly to avoid burning.

Add peppermix and meat stock and water enough to cook the rice
- 4
Add curry, bay leaves, thyme, seasoning cubes, oregano, corriander and other listed spices

Cover and allow to boil, when it's starts boiling, add your washed rice to it
- 6
Turn the rice with the wooden spatula to allow penetration of the tomato mix into every parts of the rice, cooked until the rice its soft

Finally add the peas, green beans, green bell peppers and carrots and cover the pot for 5 minutes (note: the vegetable should be added last when water is almost dried to avoid overcooked or brown vegetables.

Mix the vegetables with the already cooked Jollof rice, allow it to steam for some mint

I served mine with peppered meat, fried plantain and coslow
