Add your desired amount of Maseca corn flour to a bowl.

In a blender, combine the garlic, a little water, and the onion. Blend well.

Add the blended mixture to the Maseca. Add achiote and salt to taste, then gradually add water until you have a soft dough—not too firm and not too soft.

Heat oil in a skillet. Shape the dough into enchiladas, fill with blended or refried beans, top with cheese, and fry in the hot oil until golden brown. Remove and enjoy! You can serve them with pico de gallo.

If you don't have refried beans, blend cooked beans with half a clove of garlic and a little Worcestershire sauce until smooth. In a skillet, heat a little oil, add the blended beans, and cook for 5 minutes. Now you have blended beans ready to use.
