Spicy paneer steamed in banana leaf wrap

In the earlier era when aluminium foils were not discovered, banana leaves were used to steam or cook food. Banana leaf doesn't have so much flavour or aroma but it helps in cooking food in a very unique way and enhance the food taste someway. Normally fish recipes are prepared using banana leaves. I have tried a different recipe i. e. Paneer cooked or steamed in banana leaves. This is very unique or I can say a fusion recipe where traditional technique is used to create a new recipe. Hope you will like this recipe.

Firstly, cut the paneer into 4 equal pieces. Now take one piece and slit it slightly until 3/4th portion (in depth). Keep the paneer pieces aside.

Grind onion, ginger, garlic into thick paste. In a mixing bowl add the paste. Now add turmeric powder, red chilly powder, paneer tikka masala, salt, lemon juice, mustard oil and mix well. Now fill this mixture inside the paneer slices (pocket created in each paneer pieces). Coat all the paneer pieces with this mixture and keep aside for 10-15 minute, for marination.

Now meanwhile, heat tawa. Take each banana leaf and keep on hot tawa on low, flame. Using a kitchen cotton towel press the leafe slightly all over (by turning both the sides). You need to do this step for atleast 1/2 minute to ensure banana leaves are soft enough to fold easily. Repeat this step for all the remaining leaves.

Now take one leaf, put the marinated paneer piece. Fold the sides of the banana leaf to cover the panner and give pocket shape. Do this step for all the paneer pieces. Now keep these banana leaf pockets on a steel plate or steaming plate.

Now take a deep bottomed kadai. Add water, keep steel stand inside the kadai. Now keep the steel plan on top of the stand. Ensure water level is below the plate. Now cover the kadai with lid, on medium flame keep for 5 minutes. After 5 minutes turn the banana leaf pockets upside down. Again cover the kadai and keep on medium flame for another 5 minutes.

Spicy steamed paneer is ready.
