Wash rice and soak it for 20min. I am the lazy one who soaks my rice overnight.

Drain the rice and put them into a non-stick pan. Add adequate water into the pan according to the type of your rice. I used a rice-to-water ratio of 1:1.2 for my >soaked< Japanese short grain. Some people use 1:1.25 on their soaked short grain and also get great results.

Heat the rice at the highest degree and boil the rice for 2 min. Now put a lid on the pan and allow the steam to escape through a little space. Turn to low heat and cook until you hear a squeak from the pan. This squeak indicates most of the unintended moisture has been steamed. In my case, it takes 14 min to reach this step.

Turn off the heat, leave the lid on the pan for at least 10 min and then serve the rice. This short waiting time helps the starch to further gelatinise without being over-cooked.
