I had a bag of dry beans from the panic buying spree when the pandemic lockdowns began, but I never figured out what to do with them before now. I managed to score some Andouille sausage somewhere and found this recipe that seems like it would work with what I got. 🇺🇲 #cajun

Ingredients

  1. 400 gred beans
  2. 1/2 kgAndouille or Kielbasa sausage, sliced into rounds
  3. 6 stripsbacon
  4. 1onion, chopped
  5. 3 clovesgarlic, minced
  6. 1 1/2 tbspCajun seasoning
  7. 1 tspthyme
  8. 1 tspground sage
  9. 1bay leaf
  10. 4 cupschicken broth
  11. 1/4 cupvinegar (apple cider or red wine)

    Soak the beans overnight in water.

    With medium heat, heat oil in a large pot and fry the onions until transparent, about 5 minutes. Add garlic and bacon, fry for another minute.

    Add sausage, red beans, Cajun seasoning, thyme, sage, bay leaf, and chicken broth. Bring to a boil, then reduce the heat to medium low. Skim off the scum from the top. Let simmer for 1½ to 2 hours or until the beans are tender, stirring occasionally.

    Stir in vinegar and mash beans slightly with a spoon. Serve over hot steamed rice.
