In a mixing bowl take suji, rice flour and curd. Mix well.

Add enough water and mix well. Rest for 15-20 minutes. Mix again and add required water if needed.(Prepare little thick batter). Add salt, black pepper powder, crushed green chillies and chopped coriander leaves. Mix well. Batter is ready.

Now add eno into, pour 1 teaspoon water over it and stir in one direction. Batter turns soft and fluffy. Heat nonstick tawa. Spread one big spoonful of batter in circular motion. Apply some chopped onion, tomato, capsicum, cabbage on it. Press vegetables gently with spatula. Apply oil, cover with lid and cook until bottom side turns golden brown. Then flip it and cook this side too. Veg suji uttapam is ready. Serve with coconut chutney or tomato sauce.
