Rava uttapam

In a large bowl add 1 cup of rava.Add curd and mix well.
Now add 1/2 cup of water and make a thick batter. add some more water if required. Add salt and mix it well. - 2
Now add 1/2 tbsp of baking soda. keep it aside for 20 minutes.In a bowl add finely chopped onions, carrots, tomatoes, beetroot, green chilli, coriander leaves and red chili powder add salt as per taste. After adding salt, mix it properly with a big spoon start preparing uttapam immediately.

In a dosa pan pour a ladleful of uttapam batter and spread in a circular motion. Maintain the thickness of uttapam and it should not be like a thin dosa.
Now spread the toppings on top of the uttapam evenly. After the topping has been added press gently so the toppings are pressed into the batter. Add 1 tbsp of butter around the uttapam.
Cover it and let it cook for 1-2 minutes in low flame. - 4
Flip over on the other side once the uttapam turns golden brown. Cook it for 1-2 minutes in a low flame. Serve with sauce and chutney.
