A very famous recipe from the region of Bihar. Bhabhra is basically a cheela made with green gram or cholia. Since green gram is not available throughout the year I make it with boiled black chana. It is fried in a pan with a lot of ghee something like tikkis. However I didn't have the courage to use that much ghee so I just shallow fried them. Highly nutritious and healthy as it has a lot of protein. Serve it some green chutney and ketchup (always needed with everything)

Ingredients

45 minutes
3-4 servings
  • 1 cupbesan
  • 2 tbsprice flour
  • 1/3 cupboiled black chana
  • 1/2onion finely chopped
  • 1/4 cupchopped hara dhaniya
  • 1 TSPchopped green chillies
  • 1 TSPsalt or to taste
  • 5-6 tbspghee

Steps

  1. 1

    To make the bhabhra mix all the ingredients except ghee, nicely in a bowl.

    Add water to make a batter neither too thick nor too thin. Keep aside for 10 minutes. I use the water from the boiled chanas as well.

    Heat a cast iron tawa. Add some ghee. Now pour some batter on the tawa and spread it carefully. This cheela will be thicker than your normal cheela.

    Let it cook on one side till golden brown and crisp. Now turn the bhabhra and cook it while pressing it with a spatula.

    Serve hot with green chutney or sauce of your choice.
