Put the first seven ingredients into the pot, enough to make sure all the pasta is covered

Put the lid on and seal. Set IP to manual for half of the recommended minutes on the pasta box

When it's done, quick release in spurts to avoid a fountain of starchy liquid. When pressure is gone, remove the lid. Do not drain

Stir the pasta. Add evaporated milk and stir well

Add Velveeta and stir until mostly melted
- 6
Add cheddar a handful at a time and stir until melted before adding more. Repeat until cheddar cheese is used up
