Gratin Dauphinois and Roast Beef
A simple yet timeless dish.

Peel and slice the potatoes into rounds. Parboil them in water for 15 minutes.

Mince the garlic. Preheat the oven to 350°F (180°C). Butter a baking dish and rub the bottom with garlic. Place the cooked potatoes in the dish, then pour over the mixture of milk, cream, salt, pepper, and nutmeg. Dot the top with small pieces of butter. Bake for 50 minutes.

For the roast beef: Take it out of the refrigerator 30 minutes before cooking. Salt both sides and let sit for 5 minutes. Preheat the oven to 375°F (190°C). Place the roast beef in a baking dish, arrange the peeled whole garlic cloves and shallots around it with the bouquet garni. Add 1 cup of water. Brush the top with butter or margarine.

Bake for 15 to 20 minutes, depending on your preferred doneness. Halfway through cooking, baste with water or pan juices.
