Ingredients

45 minutes
2 people
  • 1/4 cuptapioca pearls
  • 1pot of boiling water
  • 1/4 cupbrown sugar
  • 1/3 cupwater
  • Iced Milk Tea
  • 1/2 cupvery strong black tea
  • Enough milk to make it a light brown, a few tablespoons
  • Iced Coffee
  • 1/2 cupvery strong coffee
  • Enough milk to make it light brown, a few tablespoons
  • To serve
  • 1lot of ice
  • 1paper or metal straw

Steps

45 minutes
  1. 1

    Boil the tapioca for 20 minutes until large and plump.

  2. 2

    Meanwhile combine the sugar and water in a pan and melt until fully dissolved and liquid.

  3. 3

    Once the bubbles are cooked, rinse them under cold water to stop the cooking, and then soak in the sugar syrup for 10 minutes.

  4. 4

    Prepare the tea or coffee, by mixing the milk and beverage of choice.

  5. 5

    Put a large amount of bubbles into the glass, then fill it up with crushed ice halfway. Add a tablespoon of the sugar syrup to the glass and then fill it up with coffee or tea. Enjoy on a hot summer's day or if you just fancy one!
