In a large bowl, sift the flour. Add the melted, cooled clarified butter, a pinch of salt, and 1 tablespoon sugar. Mix the butter into the flour with your hands. Gradually add the warm water mixed with orange blossom water, and knead until you get a smooth dough. Divide the dough into 14 equal balls, cover, and let them rest overnight or for a few hours.

Lightly moisten the filling ingredients, similar to preparing couscous. Grease your baking tray with butter. Roll out the first dough ball to fit the tray, then brush with melted butter mixed with baking powder. Roll out and layer seven dough balls, brushing each layer with butter except the seventh. Spread the filling evenly over the seventh layer. Repeat the process with the remaining seven dough balls, layering them on top. Roll out the final layer very thin, like for noodles.

Once assembled and smoothed out, cut the baklava into squares using a sharp knife. Place a peanut in the center of each piece. Let the tray rest for two hours before baking. Bake on low heat until golden, about one hour. Once baked, pour thick, cooled honey syrup over the baklava. I prefer using honey for extra flavor. Let it sit overnight, then cut and serve. My customer loved it—hope you enjoy it too!
