Stuffed Italian spiced potato in spinach

Add water to the kadhai and bring it to boil. Then add palak/spinach leaves to it and salt. Cook for 5 min. Then take the blanched palak leaves out and cool down and make a fine paste.

Take the baby potatoes and peel them and cut into half and make a hole in center using a knife or scooper

Deep fry the Potato until golden brown.

For Potato stuffing: In a bowl, take grated Paneer and grated cheese then add Italian spice, black pepper powder, oregano, red chilli flakes.

Mixture is ready to stuff. Take one Potato one by one and stuff the filling in the fried potatoes.

Now in a pan add oil and jeera and let it splutter, then add garlic chopped,

Add finely chopped onions and cook till onions are slightly golden brown,. Then add finely chopped tomatoes and cook for another few minutes till tomato are a little mussy.

Then add the dry spices haldi, coriander powder, red chilli powder,garam masala and cook for few minutes.

Add the palak /spinach puree and cook for a few minutes and add 1 cup water and bring to a boil. If you have stuffing left then you can add to the gravy. It will give creamy gravy for our Italian spiced Potato.

Take the gravy out in a bowl and place the stuffed Potato on top and serve with your Naan or roti or paratha.
