Gujarati handvo is a traditional snacks enjoy with green chatni. It is mainly made from rice,lentils and vegetables.Its batter is fermented before using. It can be prepared by three different methods. Using a pan,baking in special handvo cooker on flame and can be baked in oven .
Here I prepare in a pan on gas .

Wash and soak all dal and rice about 4 hour

Now make smooth batter into grinder add green chilli and ginger piece

Add curd and rest for about 6 hours or overnight for better fermentation.

Now mix salt,red chilli powder,turmeric powder,sugar grated lauki and mix well.

In a kadai add oil when hot add Asafoetida, mustard seeds,kari leaves,seasame seeds when cracked add batter and cover with lid and flip it now cook both sides and check with toothpicks if clear remove it on plate and cut into slices and serve with chatni.
