Turiya patra sabji
Steps

Cut steamed Patra rolls into 1/2 cm inch wide. Peel off ridge gourd skin and chop in into medium sized pieces

Heat oil in pan- when oil is hot add fennel, red chilli, asafoetida, and ginger and turmeric- cook it for few seconds.

Add ridge gourd, salt and mix it well.

Cook it on low flame for 7-8 minutes.the add red chilli powder, cumin coriander powder and garam masala
- 5
Add patra, mix it well and cook for another 3-4 minutes on low flame.

When it’s done - switch off the gas and add chopped coriander and serve it hot with roti or puri.
