Paella with Secreto Pork, Mushrooms, and Green Garlic

First, make the broth. Sauté the bones in a pot with a splash of olive oil and some salt. Add water. When it starts to boil, add the carrot and bouillon cube. Cook for about 40 minutes. Adjust salt to taste and strain the broth.

Prepare the ingredients for the paella. Cut the secreto pork into cubes and season it. Clean and cut the vegetables.

For the sofrito, grate the tomato and chop the garlic.

Add a good splash of olive oil to the paella pan. Sear the pork.

Once the pork is ready, set it aside and repeat the process with the vegetables.

When the vegetables are ready, add the tomato and garlic mixture. Stir well and add the sweet paprika.

Add the pork back in.

Pour in the broth. It should reach the level of the pan handles. Add the food coloring. When it starts to boil, add the rice and spread it evenly. Cook for about 20 minutes.
