A new grilled pork vermicelli shop opened near my house, and the aroma of grilled meat is irresistible, so I decided to make it this afternoon!

Cut the pork shoulder into bite-sized pieces and marinate with minced lemongrass, garlic, honey, sugar, sweetened condensed milk, oyster sauce, annatto oil, and seasoning powder for at least 3 hours to absorb the flavors.

Preheat the air fryer to 355°F for 5 minutes. Spread the meat evenly and cook until both sides are golden and fragrant.

Shred the carrot and daikon radish. Mix 1 tablespoon vinegar, 1 tablespoon sugar, and 2 tablespoons water. Soak the carrot and daikon in this mixture and refrigerate for over 4 hours until pickled.

Prepare the fish sauce for the vermicelli: Mix 2 tablespoons good-quality fish sauce, 2 tablespoons sugar, 1 tablespoon lime juice, 10 tablespoons water, and minced garlic and onion.

Mix the vermicelli noodles with fresh herbs, grilled pork, spring rolls, crushed roasted peanuts, pickled carrot and daikon, fried onions, and fish sauce, then enjoy!
