Marinated Fried Anchovies

Buy fresh anchovies, then clean by removing the guts and heads. Next, freeze them without washing to preserve them better. Freezing also kills any parasites (anisakis). For safety, freeze for about 5 days, depending on your freezer's rating.

After freezing, thaw the anchovies and rinse them with water to clean.

Marinate the anchovies in white wine vinegar, salt, and a splash of water. Let them marinate for about 1 hour, or longer if possible.

After marinating, drain the anchovies, pat them dry with paper towels, and sprinkle with black pepper, dried garlic, and parsley.

Dredge the anchovies in chickpea flour and fry them in a skillet with plenty of oil.

Remove the anchovies and place them on paper towels to absorb excess oil. Serve and enjoy.
