Each of us does little things automatically every day, without really thinking about them.
These small gestures, my love, come from memories and habits from long ago. Maybe when you grow up, you’ll wake up right away in the morning like you do now, like me, and you’ll find it hard to fall asleep at night unless you have a steady routine.
Our habits are what define and comfort us, and with you, I realize this even more. After just three months, you already have your routine of playtime or reading a little book you love for its colors and pictures. Early in the morning, you have your time with Dad, and later you’re in the kitchen with Mom, baking cakes and making dough.
Even this dessert is part of a routine. Grandma’s milk soup, which she has for dinner once or twice a week in winter. Maybe it’s from that coffee-scented aroma that these little cups come to life.
Comforting bites that taste like family.

Ingredients

30 min + chilling
8 small servings
  • For the panna cotta:
  • About 3/4 cup milk strained from bread (made by soaking 7 oz stale bread in 3 1/3 cups milk, then straining)
  • 2/3 cupmilk (160 ml)
  • 1/4 cupgranulated sugar (60 g)
  • 1vanilla bean
  • 1 1/2 teaspoonsagar agar (4 g)
  • For the chocolate coffee sauce:
  • 7 ozdark chocolate (200 g)
  • 1/4 cupunsalted butter (60 g)
  • 2 1/2 tablespoonscold coffee (40 g)
  • 2 1/2 tablespoonsmilk (40 g)

Steps

  1. 1

    1. Bring the panna cotta ingredients to a boil; they should reach 195°F (90°C).

  2. 2

    2. Stir, let rest for a couple of minutes, pour into molds, and let cool to room temperature. Then refrigerate until ready to serve.

    3. Melt the chocolate and butter in a double boiler. Remove from heat, slowly whisk in the coffee, then add the milk.

    4. Return to the heat briefly, stirring just until combined, then let cool to room temperature.

  5. 5

    5. Spoon a tablespoon of the chocolate coffee sauce over each panna cotta. Garnish with dark chocolate shavings and, if desired, fresh fruit or mint leaves.
