Brinji Egg
Quick hot and crispy supper.
Steps

Cut the pieces of Brinjal in round shape.

Take a pan filled with water and add some salt and Brinjal pieces in it.

Let the Brinjal soak the water for 4-5 minutes.

Scrap out the middle part of the brinjal and chop it to use it in the egg mixture later.

Take a pan and beat the egg thoroughly.

Add chopped onions,black pepper,salt to taste,scraped part of brinjal (chopped),green chilies, coriander.

For binding,add maida to the egg mixture.Mix it thoroughly.

Take a pan and grease it with oil.

Now place the round brinjal on the pan and add the mixture into it.

Let it cook on a low flame for 1-2 minutes.

Then flip it on the other side. To cook it more efficiently cover the pan with a lid.

Serve hot and delecious snack, brinjiegg with green chili sauce.
