Ingredients

Serves 2 servings
  • 10large shrimp, peeled and deveined
  • 8 oz.Lo Mein noodles (about 227 grams)
  • 2 clovesgarlic, minced
  • 1 teaspoonminced ginger
  • 1 tablespoonvegetable oil
  • 1 teaspoonspicy sesame oil
  • 1 teaspoonregular sesame oil
  • 2/3 cupthinly sliced red bell peppers
  • 2/3 cuporange bell peppers
  • 1 cupsliced mushrooms
  • 1 cupsnow peas
  • 1Japanese eggplant, cut into thin strips
  • Sauce
  • 1/4 cupsoy sauce
  • 1/4 cupchicken broth (made with 1/2 chicken bouillon cube and water)
  • 1 tablespoonhoney
  • 1 teaspooncornstarch

Steps

    Measure and cut all the ingredients for the recipe. Make the sauce by mixing the sauce ingredients well in a small bowl. Bring a pot of water to a boil and cook the Lo Mein noodles until al dente, then rinse immediately with cold water. Set aside. In a small bowl, mix the oils together.

    Heat a wok or large skillet with half of the combined oils and sauté the ginger and garlic, but do not let them brown. Add and stir-fry the vegetables until just tender-crisp. Transfer to a plate and set aside.

    Add the remaining oil to the wok and stir-fry the shrimp until they turn pink. Do not overcook or they will become tough. Add the vegetables, noodles, and sauce to the shrimp. Mix well and heat through.
